Guest Chef Jason Hammel from Lula Cafe

Guest Chef Series with Chef Jason Hamel

Jason Hammel is the executive chef and owner of Lula Cafe in Chicago, the Logan Square community institution for its creative, seasonal, all-day cuisine. Since 1999 Lula has been at the forefront of the farm-to-table movement in the Midwest, but growing up in New Haven, Connecticut, Hammel aspired to be a writer, not a chef. After graduating in 1994 with a degree in English, he traveled to Italy, where an accidental stay across the street from Florence’s central market foresaw his career as a chef dedicated to seasonality.

Chef Jason Hammel has been nominated three times as a finalist for James Beard Best Chef Great Lakes.  His cookbook, The Lula Cafe Cookbook, was released in the Fall of 2023 by Phaidon.  

Lula has been featured on NPR’s “This American Life,” in The New York Times, Food and Wine, Bon Appetit, and in Chicago press where Lula has been named an LTH Forum Great Neighborhood Restaurant, a Michelin Bib Gourmande, Jean Banchet Best Neighborhood Restaurant, and a proud member of the “Eater Essential 38.”

You will also learn various fillings for stuffed pasta as well as the sauces that pair with the pastas. You will also learn how to properly store and ultimately how to cook the pasta (right amount of water, salt as well as how to extract the starch) with the right amount of sauce to create an amazing dinner.

A Timpano Feast!

We will teach you how to make a Timpano, the Italian masterpiece that is the center of the feast in the movie Big Night. A dish layered with meatballs, sausage, salumi, pasta, eggs, cheese and ragu all wrapped in a delicate pastry. A true celebration of flavors and textures! You can then take this work of art home, cook it and serve it with the other dishes from our class to make a 3 course dinner party in your home that night for up to 8 people! (Up to 2 people can attend for the same price. You will just be making the same amount of food)
